There is a Mac version of RDP and latency can be extremely low, assuming both machines are connected to wired network.
If you need x86 compatibility (or CUDA), this is still your only true option and it's not a bad one. Remember that virtualization takes resources and if you have Internet, it could make more sense to remote into a Windows machine.
Parallels 17, released last week (I think) can theoretically run Windows 11 using Monterey, but I couldn't get it to update from 10 even after I enabled the TPM feature. Apple is already releasing hardware that isn't compatible with Intel and the TouchID keyboard is included there.
